      Beer and oyster shells have been hanging out together for hundreds of years, with oyster shells providing a source of calcium carbonate for adjusting brewing water chemistry. Somewhere along the way, the entire oyster — shell, meat and brine — ended up in the kettle, and thus “oyster stout” was born. Our “black ale with bivalves” is a collaboration with Drayton Harbor Oyster Company, whose oyster beds lie just 2 miles directly west of the brewery. A subtle, underlying, caramel wave carries a slight brininess all the way to the roasty shores of barley town. In the fall and winter, major low tides occur at night, leaving our local oyster farmers to brave the “Dark Harbor” to work the tide flats and harvest their bounty.

      The St.Bernardus Abt 12 is the pride of our stable, the nec plus ultra of our brewery. Abbey ale brewed in the classic 'Quadrupel' style of Belgium's best Abbey Ales. Dark with a full, ivory-colored head. It has a fruity aroma, full of complex flavours and excells because of its long bittersweet finish with a hoppy bite. (10,0% ABV) Worldwide seen as one of the best beers in the world. It's a very balanced beer, with a full-bodied taste and a perfect equilibrium between malty, bitter and sweet. One of the original recipes from the days of license-brewing for the Trappist monks of Westvleteren.

      From northern Germany, the town of Jever near Denmark Border. Unique in taste. The secret lies in the water, which is still taken from the same well used for over 160 years. The water from the well is unusually pure and soft. This allows the brewery to add a touch more hops to create the Friesian-bitter taste that distinguishes Jever Pilsner from any other beer. The pure Friesian spring water, coupled with fresh Hallertau hops produces a beer that has become prized around the world for its distinctive palate and crisp, dry finish. International Bitterness Unit scale is a standard for measuring the amount of hops in one's beer. Jever scores a 44 on IBU scale. This is unusually high for a Pilsner.
